Ingredients

    1 cup oatmeal
    1 cup boiling water
    1 cup flour
    1 tsp baking soda
    3/4 cup finely chopped dates
    1 cup brown sugar
    1/2 cup margarine
    1 tsp vanilla
    2 eggs

Directions

Stir oats into boiling water. Cover and let sit for 20 mins.

Combine flour, baking soda and dates. Set aside.

Cream together margarine and sugar. Beat in eggs and vanilla. Stir in flour mixture. Fold in cooked oatmeal.

Divide into greased muffin cups. Bake at 375 F for 15-20 minutes. Makes 1 dozen.
