Ingredients

    1 1/2 c. white flour
    3/4 c. whole wheat flour
    3/4 c. oat flour
    1 t. salt
    1 t. baking soda
    1 t. baking powder
    2 1/2 t. ground cinnamon
    1/4 t. nutmeg
    3 eggs
    1/4 c. vegetable oil
    3/4 c. unsweetened applesauce
    1 c. plain yogurt
    1 1/2 c. splenda
    2 t. vanilla
    1 c. shredded zucchini
    1 c. shredded carrots
    1/2 c. raisins

Directions

Preheat oven to 400. Prepare 24 muffin cups. Combine dry ingredients. In separatea bowl combine everything except zucchini, carrots and raisins. Mix dry and wet together just til moistenend, stir in zucchini, carrots and raisins and scoop into muffin cups. Bake 18-20 minutes.
