Ingredients

    4 (4-6-oz) salmon filets
    4 ears corn, kernals removed from cob
    1/2 small ripe avocado, diced
    1/4 c chopped red onion
    1/4 c chopped cilantro
    2 tbsp extra virgin olive oil
    2 tbsp champagne vinegar
    2 tbsp red wine vinegar
    salt & pepper to taste

Directions

Salad:
combine corn, avocado, onion, cilantro, oil and vinegars - toss gently and set aside

Salmon:
spray filets w oil, season w S&P. grill or broil until cooked thru.

serve immediately, topped w corn & avocado salad
