Ingredients

    1 sleeve saltine crackers
    1/4 cup melted butter
    1 pkg taco seasoning or equivalent custom spices
    1 lb hamburger
    1 can black beans, drained
    1 can diced tomatoes, plain or flavored
    1/2 cup shredded cheese, Mexican blend or other

Directions

Preheat oven to 350*. Crumble the saltines well, by hand or in a food processor, and mix with the melted butter. Press this into a pie pan to form a crust. Bake for 8-10 minutes to set.
Cook the hamburger, drain, add the beans and taco seasoning, heat through.
Layer the meat & bean mixture, tomatoes, and cheese in the crust and bake another 15 minutes.
Makes 6 wedges.

    sounds good.. but not healthy... I think this can be modified greatly to cut the high fat calories and sodium. LIke using dried beans, and very lean beef and fresh tomatoes and seasonings instead of packaged taco seasoning. Might give it a try thanks! - 7/21/10
