Makes 12 1 Serving = 2 muffins Makes 12 1 Serving = 2 muffins
Number of Servings: 6


    1/2 cup 1% milk
    1 10oz frozen chopped spinach
    1 tsp flax seed meal
    5 lrg eggs
    3/4 cup low fat cheese of your choice
    chopped onion and garlic to taste
    1 tsp dry mustard optional


Thaw spinach and aqueeze out water. (I use fresh spinach, rinse chop and saute )
In a bowl add eggs and beat. Add the rest of the ingr. and mix together.
Spray muffin tin (this makes 12) pour into tin.
Bake 350F for 20mins
Cool on rack.
Can place 2 in a bag and freeze.
Can use zucchini, mushrooms, asparagus, or whatever you would like. Have 2 muffins and a side of fruit for breakfast. Enjoy
