Introduction

Ingredients

2 Tbsp Vegetable oil
2 cups of potatoes, diced
1 cup of onion, chopped
1 cup fresh salsa, hot or mild
1 cup shredded low fat mexican cheese blend
8 egg whites
2 whole eggs
2 Tbsp 1% milk
1 tsp salt
1/2 tsp pepper
Directions
Preheat oven to 400 degrees.
Heat oil in skillet (ovenproof 6-8 cup capacity, if available).
Add potatoes and onions and cook over medium heat until golden, stirring often (about 15 minutes).
Add salsa to skillet and cook off liquid for about 3-4 minutes.
Remove from heat. Transfer mixture to a casserole dish, if skillet is not ovenproof.
Sprinkle cheese over potato, onion, salsa mixture.
In a bowl, whisk eggs and egg whites with milk, salt, and pepper.
Pour egg mixture over potato mixture.
Bake at 400 degrees for about 15 minutes.
Makes 6 servings.
Good to cut into portions ahead and refrigerate. Reheat in microwave for a quick breakfast.
