Number of Servings: 8


    Olive Oil, 2 tbsp
    Onions, raw, 1 medium (2-1/2" dia)
    Jalapeno Peppers, 2 pepper
    Celery, raw, 2 stalk, medium (7-1/2" - 8" long)
    Carrots, raw, 2 strip, medium
    Turkey, Ground turkey, 93% lean, 8 oz
    Garlic, 3 clove
    Sage, ground, 1 tbsp
    Oregano, ground, 1 tsp
    Chili powder, 1 tbsp
    Cumin seed, 1 tsp
    Cloves, ground, 1 tsp
    Paprika, 1 tsp (remove)
    Bay Leaf, 1 tsp, crumbled
    Can of Diced Tomatoes, 15 ounces
    Chicken Broth, 4 cup (8 fl oz) (remove)
    Can of Cannellini Beans, 2 cup
    Sour Cream, to taste
    Chives, to taste


Serves 8-10
1. Heat Oil in a large nonstick skillet over medium-high heat. Add onions and saute for about 8 minutes, until softened. Add the jalapenos, celery, carrots, and a pinch of salt and saute another 10 minutes.
2. Brown the turkey with the vegetables. Season with salt and pepper to taste and cook until no longer pink.
3. Add the garlic, and other spices until mixture is well coated and begins to form a paste.
4. Add the sauteed vegetables, tomatoes, and chicken stock and bring mixture to a boil. Reduce heat and simmer for 45 minutes. Add the beans and simmer 5 more minutes. Serve with sour cream and chives, if desired.
