    1.5 lb Shrimp, tails removed
    20 oz. Scallops
    *Del Monte Petite Cut Diced Tomatoes, 2 Can
    2 Cups dry Brown Rice
    Celery, raw, 1 cup, diced
    Onions, raw, 1.5 cup, chopped
    Garlic, 5 cloves
    Parsley, dried, 1 tsp
    *Black Pepper (Ground), 1/4 tsp
    Salt, 1 T.
    Paprika, .1/2 tsp
    *Dried Thyme, 1/4 tsp
    Pepper, red or cayenne, 1 tsp
    Lime Juice, 2 fl oz


Coat a large pan with Olive Oil spray. Saute garlic, onions, & celery until tender crisp. Lightly brown seafood. Add lime, tomatoes & spices & simmer for 20 minutes. Add the cooked brown rice, mix well & simmer another 10 minutes.
Makes 8, 2 cup servings
