Introduction

This is similar to the recipe I was given just before I married my husband from Libya by another American/Libyan wife.

Cooking times not exact. Always taste & adjust spices to your taste. My measurements may be off as I tend to get inspired as I cook.

Ingredients

    Onions, raw, 1 medium (2-1/2" dia) diced
    Olive Oil 2 tbsp
    Garlic, 3 cloves creamed with a small dash of salt in mortar & pestle
    Tomato Paste, 0.5 cup
    Ground Cilantro 1tsp
    Turmeric 1/2 tsp
    Salt 1 tsp (or to taste)
    Water 3 qt
    Chickpeas (garbanzo beans), 1 cup
    Cod (fish), 3 fillet
    soup pasta 1/3 cup (eg. alphabet, stars, orzo, broken angel hair)
    Ground Cumin, 0.25 tsp
    Cinnamon, ground, .25 tsp
    Peppermint, fresh, 4 leaves diced fine (dry leaves- rub between hands to grind)

Directions

Saute the onion in the oil;
when soft add garlic, tomato paste, & spices except Cumin;
stir to combine;
add water & chickpeas;
bring to a boil
when slightly thickened add fish, pasta, cumin, cinnamon, & mint
Stir to keep pasta from sticking
boil 10 min or until fish & pasta are done.
