1 cup zucchini sliced, 1 tbsp extra virgin olive oil, 2 tbsp feta cheese, 1/4 cup fresh mint leaves loosely packed and chopped fine, 2 tbsp pine nuts, 1 tbsp finely grated lemon zest
Directions
Combine zucchini rounds and lemon zest in a medium bowl and toss to coat zucchini. Arrange zucchini on a platter, slightly overlapping the slices.
Drizzle with olive oil and sprinkle with salt and freshly ground black pepper. Sprinkle remaining ingredients over zucchini and serve. This makes 4 servings
