    1 box of penne pasta
    4 chicken breasts, grilled and sliced
    1 tbsp minced garlic
    1 red pepper, sliced
    1 green pepper, sliced
    1 onion, sliced
    1/2 c. shredded carrots
    1 c. sliced mushrooms
    1 1/2 c. milk
    1/4 c. curry paste
    1/2 c. lite maple syrup
    2 packets of splenda

    Cook the veggies in evoo and garlic until soft. Sprinkle with splenda and cook for a bit. Pour maple syrup over veggies and carmelize a bit. Add in chicken, milk and curry. Simmer.

    You should be cooking pasta at the same time. Cook until the pasta is still a bit firm. Add in sauce and cook, continuously stiring until the sauce is think and mostly cooked up into the pasta.

    Serve sprinkled with chopped green onion.


Divide into 6 servings.
