    2 TBS Olive Oil
    4 oz fresh green beans, snap in half
    one Kholrabi, about 4 oz
    2 oz onion, chopped
    2 oz mushrooms, sliced
    4 oz tomatoes, chopped or use grape tomatoes
    2 oz Kale, chopped - remove stems first
    1 TBS garlic, chopped
    Black pepper to taste
    1/4 tsp salt
    Garlic and Herb seasoning or other if you prefer.


Add Olive oil to a large saute pan, put in all vegetables except the Kale. Saute over medium high until vegetables begin to soften. Add Kale, garlic, pepper and other seasoning, saute until Kale wilts. Remove from direct heat.
At this point you can either serve or cover the pan and let it rest for 10 minutes.
Makes 2 large servings or 4 side dish servings.

  • Thank you for writing this recipe. I made it but it turned out that I used curly endive instead of kale. I don't know my greens too well LOL! It was colorful and yummy. It's also a great anti-cancer dish. (Shiitake mushrooms) - 11/2/10
