    3 avocados, cut in half and deseeded
    2 Tbsp olive oil
    2 Tbsp lime juice
    dash of salt
    3 slices pepper jack cheese, cut in half
    Pico de gallo, to taste


Combine olive oil, lime juice and salt in a small bowl. Mix and set to the side.

Cut avocado in half and remove the seed. Brush the fruit with oil and place the fruit down on a grill. Cook for 3-5 minutes until grill lines are visible. Then turn fruit with the husk side down.

Lay cheese in center of the fruit and top with pico. Grill another 3-5 minutes or until cheese is melted.

serving = 1 half
