A good "South Beach" recipe. High in fiber and protein! A good "South Beach" recipe. High in fiber and protein!
Number of Servings: 1


    1 1/2 cups cooked spinach
    3/4 cup tomatoes (I like to use grape, but you can use any kind)
    2 large eggs
    2 T. skim milk
    1/2 cup cottage cheese (2%)
    Mrs. Dash to taste
    Fresh ground pepper to taste


Saute fresh spinach, or use canned or frozen, so you end up with approx 1 1/2 cups cooked. Add tomatoes and continue to saute until they're hot. Season to taste with Mrs. Dash and freshly ground black pepper. Shake eggs and milk together, then pour into spinach and scramble. After eggs start to set, add the cottage cheese. Add more seasoning if you like. Continue to scramble until eggs are cooked. Makes 1 (large) serving!
