Ingredients

    3/4 cup unbleached flour
    3/4 cup whole wheat flour
    1/2 cup cocoa powder
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    2/3 cup splenda
    4 mashed ripe bananas
    1/4 cup egg substitute
    1/4 cup applesauce
    1/4 cup semisweet mini chocolate chips

Directions

In a large bowl, combine the first six ingredients. Stir in the chocolate chips to coat with dry mix. In a small bowl, combine bananas, oil and egg; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups three-fourths full. Bake at 350 for 20-25 minutes or until muffins test done. Yield: 1 dozen.
