Ingredients

    1 small cucumber peeled and chopped
    1/4 cup minced onion
    dill to taste
    1 cup chicken broth
    1/2 cup low fat yogurt or low fat sour cream
    salt and pepper

Directions

Peel and chop cucumber--saving a few slices out for garnish. Minced onion and sauteee in a little butter or broth 2 or 3 minutes
add cucumber, broth and minced fresh dill. simmer for twenty minutes. Puree and chill till very cold. Before serving adjust seasonings and add yogurt/sour cream. and the slices of cucumber
