    1 bunch watercress, leaves picked
    1 garlic clove, chopped
    1 anchovy fillet (optional)
    1/4 cup chopped chives
    2 Tbl tarragon leaves
    1/2 cup parsley, plus extra to garnish
    1 1/2 cups grapeseed oil
    1 egg yolk
    Juice of 1 lemon
    Vegetables and/or chargrilled sourdough to serve


Blanch the watercress in boiling salted water for 30 seconds. Drain, refresh in iced water, then drain again. Squeeze to remove excess water. You should now have about 1 cup of blanched leaves.

Place the garlic, anchovy and herbs in a blender with 3/4 cup oil and blend until smooth. Transfer puree to a jug.

In the clean blender, pulse egg yolk with lemon juice for 1 minute until combined. With the motor running, slowly drizzle in the remaining oil in a thin, steady stream until thick and emulsified. With the motor still running, pour in the herb puree and pulse until smooth and emulsified. Seas to taste with salt, pepper and extra lemon juice.

Serve garnished with extra parsley, watercress and toasts or vegetables for dipping.
