Ingredients

    6 cherry tomatoes
    2 Jalapeno peppers, chopped and seeded
    1/2c onion, chopped
    1 lime
    2c Brown instant rice
    2 Garlic cloves

Directions

Cook rice by following instructions for 4 servings. As the rice is cooking mix together the tomato, jalapeno, onion, garlic, and lime juice. Stir and put it inot the refrigerater until he rice is done. When rice is done, stir in cilantro and mixture in the fridge.

Makes: about 6-1/2 cup servings
