Introduction

This is a great soup reminds us of corn chowder,
my husband ate 2 bowls and doesn't usually eat
squash. Enjoy!

Ingredients


    Onions, raw, 1 cup, chopped
    Garlic,Minced 1 tsp
    Green Peppers (bell peppers), 1/2 cup, chopped
    Celery, raw, 1 cup, diced
    *Potato, raw, 2 cup diced
    Yellow Summer Squash, 5 cup, chopped or 1 1/2 lbs
    Aldi Chicken Broth, 2 cup
    Yellow Sweet Corn, Frozen, 2 cup kernels
    sour free,fat free, 6 tbsp
    aldi's Season salt, 1/4 tsp
    Black Pepper, pinch

Directions

Chop up your squash, green peppers,celery,onion, in microware, cook in 5 min. intervals until all vegetables are soft. Let stand an cool to warm then puree about
2 cups at a time until it is all puree. Wash the potatoes
and microware on you potatoe setting,when done peel
skins off and dice them up and put in puree mixture.
Also add garlic, chicken broth, corn, sour cream and
all seasonings.
In large non-stick pan place all items and cook on low
for about 30 mins. stirring often.
