Ingredients

    1 Chicken Breast, no skin,
    Barilla Plus Rotini, 14 oz
    Green Peppers (bell peppers), 1 cup, chopped
    Summer squash, 2 cup slices
    Yellow Peppers (bell peppers), 10 strips
    Red Ripe Tomatoes, 1 large whole (3" dia)
    Delallo Marinated Artichoke Hearts, 1 small jar
    Season salt to tast
    Greek Seasoning to taste
    1 tbsp of enova oil

Directions

Boil pasta until desired firmness, drain and rinse with cold water, add to big salad bowl. Boil, sautee, foreman grill, etc. the chicken breast, shred and add to bowl with pasta.

Chop all vegetables except tomato and stir fry in enova until just tender, let cool.

Chop tomato and add to bowl.

Add cool stir-fried veggies to bowl.

Add entire contents of artichoke jar to bowl.

Add seasoned salt and greek seasoning to taste.

Stir and chill.

Makes 8 servings.
