Zucchini pancakes Zucchini pancakes

    Zucchini, shredded and drained, 2 cup
    Cheddar Cheese, 1 cup, shredded
    Krusteaz Fat Free Buttermilk Pancake Mix,(1/2 c dry), .5 serving
    Garlic, 2 cloves, minced
    Egg, fresh, 1 large


Shred about 2-3 zucchini (with skin). Take a towel (that you don't care if it gets dyed), place shredded zucchini at one end of towel and roll up zucchini. Squeeze out all the moisture of the zucchini. Take a large mixing bowl and mix all ingredients together, until well blended. Cook like pancakes. When the bottom is golden brown flip them. Serve warm or hot. DO NOT REHEAT. (tastes nasty).
