    8 reduced fat sausages (the nutritional values include ones with 2g fat each)
    1 yellow pepper, deseeded and chopped
    4 red onions cut into wedges
    1 tin chopped tomatoes
    250ml vegetable stock (nutritional values are for low sodium stock)
    1 tbsp sugar
    small handful basil
    one small white bloomer loaf (400g)
    25g low fat cream cheese
    1 tbsp butter
    4 cloves of garlic, crushed


Turn the oven on to 220 c

Put the sausages, pepper and onions into a roasting in and roast for 20 minutes.

Lower the oven temperature to 200 c and tip the tomatoes and stock over the sausages. Add the sugar and half the basil leaves, season and stir well.

Roast for 20 minutes more.

Meanwhile make the garlic toasts. Cut the loaf into 8 even slices.
Mix together the cream cheese, butter, garlic and the rest of the basil leaves, chopped up.

Lightly toast the bread on both sides, then spread the herby mix on one side and grill until melted and golden.

Serve with steamed vegetables
