Ingredients

1 (14.5-ounce) cans chickpeas or garbanzo beans
1 tablespoons olive oil
2 teaspoons Chipotle or Other Dried Chile Rub & Marinade (see RECIPE)
Pinch cayenne pepper, or to taste
about 1/8 teaspoon Kosher salt
Directions
• Preheat the oven to 400°.
• Rinse and drain the hominy and dry by rolling them around in a kitchen towel.
• Combine the oil with the seasonings in a large bowl. Add chickpeas and toss to coat evenly.
• Transfer the hominy to a parchment-lined baking sheet and spread them out in a single layer.
• Bake until golden and crispy, 25 to 35 minutes, shaking the tray to toss after 15 minutes.
• Remove the baking sheet from the oven and transfer the hominy to a serving bowl.
• Serve about 6 (1/4 cups) servings.
