    85g fresh breadcrumbs
    500g turkey mince (ground)
    3 tbsp red thai curry paste
    1/2 bunch spring onions (scallions)
    1 egg, beaten
    spray oil
    4 ciabatta rolls, split
    handful of leaves of little gem lettuce
    1/2 cucumber, sliced
    4 ripe tomatoes, sliced


Put the breadcrumbs, mince, curry paste, spring onions and egg into a bowl. Season, then mix well with your hadns.

Divide into 4 and shape into burgers.

Chill for 20 minutes.

Spray the burgers with oil and grill for 7 minutes on each side, or until cooked through.

Toast the cut side of the ciabatta rolls.

To serve, top the rolls with a turkey burger, add lettuce, cucumber and tomato.
