Introduction

This pasta salad goes great as a side dish to most fish dishes. I serve this with a burbon salmon from Cookinglight.com that is just fantastic and still lets me meet my food goals for the day. Ingredients

    2 oz Trader Joe's Fire Roasted Yellow & Red Peppers
    1 Cup of Orzo Pasta, 1 cooked according to package directions and rinsed in cold water
    1/3 Cup Trader Joe's Artichokes
    10 Trader Joe's Greek Kalamata Olives, finely chopped
    2 Tbsp Shallots, finely chopped
    2 Tbsp Basil, finely chopped
    1 Tbsp Parsley, (flat leaf italian or curly,) finely chopped
    1 1/2 Tsp Trader Joe's Crushed Garlic
    1 Tsp Salt
    2 Tbsp Cider Vinegar
    1 Tbsp Olive Oil

Directions

Toss all ingredients and chill at least one hour before serving.

Makes approximately six 3/4 cup servings.
