Great summertime dessert. Great summertime dessert.
Number of Servings: 2


    1/2 C each sliced strawberries, blueberries, raspberries, and blackberries.
    2 egg yolks
    1/6 C sugar
    1/8 C fresh squeezed orange juice
    pinch koser salt
    1/2 tsp orange zest


In large bowl toss together the berries then spoon into serving dishes.
In another bowl combine egg yolks, sugar, juice, and salt in a large metal or glass bowl. Whisk together vigorously until combined and the color is pale yellow. Set the bowl into a double boiler already boiling do not let water touch bottom of bowl you just want steam to heat the bowl and it's contents. Use a whisk or an electric hand mixer, vigorously whisk the egg mixture until it has doubled in volume and is very thick and creamy, about 4-5 minutes. Spoon the warm zabaglione over the berries. Top with a light sprinkle of zest. Serve immediately. Serves two.
