Ingredients

    1 eggplant
    3 cloves garlic
    2 T tahini (sesame seed paste)
    lemon juice

Directions

Chop eggplant in small cubes and bake on a cookie sheet at 375 for 30 minutes or until soft and slightly browned. Puree eggplant in a food processor with garlic, tahini and lemon juice. Add water if mixture is too thick. Refridgerate overnight.

Serve with pita bread or crudites.

Makes 1 1/2 cups. Serving size is 1/4 cup.
