    Bob's Wheat Bran, 1 cup
    Bob's Red Mill Whole Wheat Flour, 1.5 cup
    Better N Eggs (egg whites), 0.5 cup
    8th Continent Light Soy Vanilla Flavored, 8 oz
    Banana FlavoredGNC Whey Protein Powder, 2 serving
    Unsweetened Applesauce, 1 cup
    Blueberries, fresh, 2 cup
    Banana, fresh, 2 large (8" to 8-7/8" long)
    Baking Powder, 1.5 tsp
    Baking Soda, 1 tsp
    Cinnamon, ground, 1.5 tsp
    Splenda, 0.75 cup
    Almond Extract, 1 tsp
    Vanilla Extract, 1 tsp


Preheat oven to 350 degrees (325 for convection). Wash blueberries and set aside on papertowels to dry. Mash bananas. In a large bowl mix all dry ingredients. You can substitute 1/3 cup of the whole wheat flour with Amaranth flour for added flavor. Add the soy milk, egg whites, applesauce, vanilla and almond extracts and then the bananas and blueberries. Mix all ingredients together, but don't over mix. Pour batter into foil lined baking cups. You can make 12 muffins and then a small loaf of bread with the leftover batter. Bake for 20 to 25 minutes or until a toothpick inserted in center of muffins comes out clean. Cool on wire rack. Refrigerate left over muffins. To enjoy them warm again, microwave for 17 seconds. Great with zero calorie "I Can't Believe It's Not Butter Spray."
