This is an incredible recipe I found on spark people, (or a version of it), but the recipe did not have accurate calorie totals. It was so incredible, I want to make it again and had to get the calories right! Enjoy! Ingredients

5 Portobello Mushroom Caps
1 lb browned ground turkey
2 C. spinach shredded
1/2 C. chopped onion
1 tsp. garlic
2 tsp. lemon juice
3 tbsp. light soy sauce
2 tsp. olive oil
1/2 tsp. chili powder
1/2 C. italian seasoned bread crumbs
4 tbsp. chicken broth
1/2 C. mozzarella cheese
Directions
Remove the stems and fins from mushroom caps, and add the mushroom insides to a pan with onions, garlic, spinach and 1 tsp. of olive oil. Mix the rest of the olive oil, soy sauce and lemon juice in a separate bowl. Drizzle over mushroom caps and grill for 5 minutes. (You can also toast them in a pinch). Saute spinach, garlic and onion with left over mixture. Once tender, add browned turkey, chili powder, bread crumbs, and chicken broth. Place mushroom caps on a cookie sheet. Spoon mixture in mushroom caps and top with cheese. Bake at 250 until cheese melts.
