Ingredients

    1 lb 93% lean ground beef
    1 cup shredded carrots
    1 cup diced onion
    2 cups water
    4 cups chicken broth
    28 oz can italian style crushed tomatoes
    1/2 box lasagna noodles (use 1/2 of 16oz box)
    1 1/2 cups ricotta cheese, divided

Directions

Brown ground beef with carrots and onion. Add water, chicken broth, and crushed tomatoes. Bring to a boil. Add lasagna noodles and cook until al dente.

Top each serving with 1/4 cup of ricotta cheese.
Makes 6 servings.
