Ingredients

    2 cups shredded carrots
    1/2 cup raisins
    3/4 cup low fat yogurt
    2 Tbsp shredded coconut
    1/4 cup chopped walnuts
    1 apple diced
    Juice from 1/2 a lemon

    Mix all ingredients together and chill one hour before serving.
