    3 large carrots, shredded
    3 large scallions, chopped fine
    2 T soy sauce
    2 T water
    2 tsp sugar
    1 tsp sunflower oil


Shred carrots and chop green onions. Saute in skillet sprayed with nonstick cooking spray.
In small bowl, combine water, soy sauce and sugar, and stir until sugar is dissoved. Add oil.
When carrots are tender, pour glaze over them and continue to cook for one minute, until glaze thickens.
