    Green Peppers (bell peppers), 750 grams
    Red Ripe Tomatoes, 3 medium whole
    Ground beef, 600 grams
    White Rice, medium grain, 3/8 cup
    Onions, finely chopped, 1 medium
    Parsley, chopped 1/2 cup
    Water, 3 cup (8 fl oz)
    Cooking Oil, 2 tbsp
    Salt, 1 tsp


Wash peppers and tomatoes
Cut cap of peppers and remove seeds, place with cap in a large pot
Cut cap off tomatoes and scoop out with a spoon into a large bowl
Place tomatoes with caps next to peppers in pot and place pot aside

Crush scooped-out tomato flesh and seeds in the bowl. (I do it with my hands, it's stress relieving and fun!) and cut up any large bits. Add ground meat, rinsed rice (uncooked), parsley, and 1/2 t. salt (or less). Mix (preferably, kneed with hands).

Fill peppers and tomatoes with meat mixture and place caps on top. Sprinkle with remaining salt, oil and hot water. Simmer for 40-60 mn.
Even better the next day, serve with yogurt on the side, and eat with a slice or two of bread, which you can dip in the juice of the dish.
