Ingredients

Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb )
Olive Oil, .25 cup
Oregano, ground, 1 tbsp
Garlic powder, 2 tbsp
Cheddar Cheese, .25 cup, shredded
*Spaghetti Sauce, Classico Tomato & Basil, .25 cup
Parmesan Cheese, grated, .25 cup
Directions
Cut the eggplants lenghtwise into 1/2 inch thick slices. Place them into a baking pan and brush them with olive oil and sprinkle with garlic powder and oregano.
Turn on the broiler in the oven and place the eggplants until lightly browned. turn the eggplant, and brown the other side.
Spoon a little sauce on each slice, and then sprinkle the parmesan and cheddar cheese.
Preheat oven to 375 degrees. Bake the eggplants for about 15 to 20 minutes depending on the thickness of the slice.
