Delicious and nutritious salsa that combines really well with sweet potatoes. Delicious and nutritious salsa that combines really well with sweet potatoes.

Ingredients

    1 can Black Beans, rinsed and drained
    2 Medium Tomatoes, chopped
    1 tsp ground Coriander
    1/2 tsp ground Cumin
    3/4 tsp salt
    2 Tbsp Reduced Fat Sour Cream

Directions

Mix together beans, chopped tomatoes, coriander, cumin and salt. Using a pan on the stove or a microwave-safe bowl, cook just a minute or two to heat through.

Delicious served on baked sweet potatoes! Top with a small dollop of reduced fat sour cream and garnish with cilantro.
