Clean out the fridge and use up all those summer vegetables! Clean out the fridge and use up all those summer vegetables!
Number of Servings: 2


    3 small summer squash, sliced
    2 cups green beans, trimmed and cut in half
    6 cups chopped swiss chard or kale, sliced in ribbons
    1 cup onion chopped
    6 cloves garlic minced
    10 leaves basil, sliced in ribbons
    1 tbsp olive oil
    1 tbsp balsamic vinegar


Heat olive oil in large skillet over medium heat. Add onion and garlic and saute until fragrant, 2-3 min. Add green beans and squash and saute for 3-4 minutes. Add chard and saute for 2 minutes. Add basil and balsamic vinegar and saute for 2 more minutes. Season with salt and pepper to taste.

Makes 2 large servings appropriate for dinner portion or 4 small servings for lunch portion.
