    1 large banana, mashed
    3 Tbsp honey or maple syrup
    2 Tbsp olive or canola oil
    1/2 cup plain nonfat yogurt or sour cream
    1/2 teaspoon salt
    1 1/2 teaspoons baking powder
    1/3 cups all-purpose flour
    1/3 cup whole wheat flour
    1 scoop vanilla protein powder
    1/4 cup flax seed


Use a whisk to mash the banana until almost liquid. Add the sugar and oil. Beat until the mixture is somewhat smooth and fluffy. Add the yogurt and salt, mixing again. Finally measure in the baking powder, protein powder and flour. Stir it all up until all of the dry particles are nicely moistened, but the batter is still lumpy. Don't mix it smooth, muffins need lumps to give them their characteristic texture. Oil up 6 muffin cups (do not use paper, the muffins tend to stick). Drop the batter into the cups, filling them up about 2/3 full. Bake the muffins at 375 for about 15-20 minutes. Remove from the oven and cool for a few minutes before removing from the pans.

If desired, you may add about 1/4 cup chopped nuts, chocolate chips or dried fruit (don't forget to add into nutritional info)
