    2 Chicken Breast, Boneless Skinless (6 oz. total)
    Egg, fresh, 2 large
    Cream of Chicken Soup, 2 can (10.75 oz)
    *Progresso Bread Crumbs - Italian Style, 0.75 cup
    Mixed Vegetables, canned, 1 can
    *Rtiz Crackers, 1 sleeve
    Smart Balance Light Buttery Spread, 6 Tbsp
    Chicken Broth, .5 cup (4 fl oz)


Season chicken breast with seasoning salt, cover with water and cook in pressure cooker for 15-20 minutes. Preheat oven to 425 degrees. Remove chicken and shred. Reserve 1 cup chicken broth from pressure cooker. In a medium size casserole dish combine chicken, mixed vegetables, cream of chicken soup (undiluted), bread crumbs, eggs, and chicken broth (to desired consistency). Season to taste. Then top with crushed Ritz crackers and drizzle melted smart balance butter spread over crackers. Bake for approx. 20 minutes until top is golden brown.
