Ingredients

Cooking Spray
1/2 large onion, diced
2 garlic cloves
4 cups fresh spinach
1 cup broccoli, chopped
2 medium potatoes
8 egg whites
3 eggs
1/3 cup smoked Gouda cheese, diced
1/4 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Trader Joes 21 Seasoning Salute*
*If you don't have the Seasoning Salute, you can substitute any dried herb, such as oregano, basil, rosemary, thyme, etc....

Directions
Makes 8 servings - 1 slice each.
Preheat oven to 350.
Spray cooking spray onto Tart pan or pie pan.
Then spray cooking spray onto saute pan and saute onions and garlic about 5 minutes till tender. Add spinach and broccoli and cook until spinach wilts, about 3 minutes. Place vegetables in a bowl and set aside.
Peel potatoes and slice at thin as possible (in mandolin). Soak potatoes in water to get excess starch out and then drain.
Line the potatoes on the bottom and side of sprayed tart or pie pan. Use all the potatoes.
In another medium bowl, whisk together the 8 egg whites and 3 eggs and stir in the diced cheese and veggie mixture. Then add the mixture on top of the sliced potatoes in the tart pan.
Bake for 35-40 minutes. As soon as you remove the tart, run a knife around the sides to loosen it and allow to cool for 10-15 minutes. Slice into 8 slices and serve.
