Ingredients

    2-3 large chicken quarters
    1 medium onion
    12-14 oz smoked turkey sausage, Cut into small pieces
    2 cup brown rice, uncooked
    2 chicken bouillon cube
    1 cup diced green pepper
    1 cup diced celery
    salt and black pepper to taste

Tips

Double this recipe for a crowd or if you want leftovers.
2 large chicken breasts can be used instead.


Directions

Cook chicken with onion in water to cover until chicken is very tender (Skiming off fat as necessary), reserving about 4 cups broth. Let chicken stand to cool. Discard the bone and tear chicken into bite size pieces.
In a large saucepan, brown the sausage, green pepper and celery. Add the chicken, bouillon, and reserved broth. Bring to a boil. Add the rice, reduce the heat and simmer, covered for about 45 - 50 minutes, or until rice is cooked. Season to taste with salt and pepper.

    When I lived in Hartsville South Carolina a friend of mine taught me how to make Chicken Bog, it is so tasty. I just use the chicken broth and seasonings without using the bouillon cubes,nor did we use sausage. I love it and everyone that I prepared it for loved it too. - 5/15/10
