    I cup watermelon cut in small cubes
    0.5 cup feta cheese
    2 cups romaine lettuce
    2 tbsp balsamic vinegar
    2 tsp olive oil
    salt to taste
    pepper to taste


Combine watermelon, feta cheese, balsamic vinegar and pepper. Refrigerate for 15 minutes. Prepare romaine lettuce in salad bowl. Add olive oil and salt to taste. Add watermelon mixture and toss. Enjoy!

    Very Good
    I did it without the lettuce and it was great. Chilled before serving. I had something similar at a Tapas Bar while visiting Washington, DC. I will make this again, easy and tasty. - 8/8/07
