    3 boneless, skinless chicken breasts
    2 Bay Leaves
    1 T. Poultry Seasoning
    1 T. canola oil
    3 carrots, sliced
    3 celery stalks, sliced
    1 1/2 c. pearl onions
    3 cloves garlic
    1 handful frozen peas
    1 T. butter
    1/4 c. flour
    5 c. chicken stock
    3/4 c. 2% Milk

    1 c. Flour
    1 1/2 t. Baking Powder
    1/2 t. Salt
    1 Egg
    1/2 c. Buttermilk


makes 6 servings

In a back-burner pot, simmer the stock and add the chicken to cook.

In a dutch oven, add the oil, butter, veggies (except peas), and bay leaves. Soften for a bit on medium heat. Add up to 1/4 c. flour to the mix and cook out for a bit.

Remove cooked chicken and shred with hands or two forks. Reserve. Add stock to pot and smooth out the flour.

Add chicken, peas, and milk. Season to taste.

Prepare the dumplings and add by rounded spoonful to pot. Cover and cook for about 15 minutes.

Sprinkle with parsley and serve.
