Ingredients

2/3 cup whole wheat flour
1 scoop protein powder (I used plant this time)
1/4 cup honey
3 Tbsp cacao powder
1/2 tsp baking soda
1/4 tsp salt
1/8 tsp baking powder
1 ripe banana, mashed
1 Tbsp coconut oil
1 Tbsp unsweetened applesauce
1 egg
1/4 C chocolate chips - OPTIONAL
Tips
The cocoa powder can be omitted if a plain banana muffin is desired. Walnuts may also be added.
Directions
Preheat oven to 350 degrees.
Spray the muffin cups with a non stick cooking spray.
Place the flour, sugar, cocoa (if using), protein powder, baking soda, salt and baking powder in a large mixing bowl.
Stir to combine.
In a small mixing bowl mix together the oil, applesauce and bananas.
Add the egg and stir well.
Carefully pour the mixture into the dry ingredients.
Mix to combine just until the dry mixture is moistened completely.
Carefully stir in the chocolate chips.
Fill each cup 2/3 full.
Bake 22 minutes or until toothpick inserted in the center comes out clean.
