Ingredients

    2 cups or 1 can of Black-eyed peas
    Brown Rice, medium grain, 2 cup ,cooked and cooled
    Red Ripe Tomatoes, 2 medium whole (2-3/5" dia), diced
    Celery, raw, 2 stalk, medium (7-1/2" - 8" long) diced
    1/2 cup Green Olives (Pimiento Stuffed) 5 Olives, 3 serving, chopped
    Red Wine Vinegar, 3 tbsp
    Olive Oil, 1 tbsp
    Thyme, ground, 1 tsp
    Allspice, .5 tsp
    Salt, 1 tsp
    Tabasco Sauce, 2 tsp or to taste

Directions

Combine peas, rice, tomatoes, celery and olives in a medium bowl. In a separate bowl, combine the remaining ingredients. Whisk to emulsify. Pour the dressing over the salad and mix well.

Let stand 10 minutes before serving. Makes 9, 1/2 cup servings.
