Introduction

Ingredients

    5 large eggs (beaten with 1/4 cup of water)
    one half of a bag of spicy sweet potato fries
    whole package of trader joe's soy chorizo
    1/3 cup of mozzarella cheese
    1/2 c. chopped bell peppers (red, yellow, green).
    You could easily only use half of the package of the soy chorizo which would reduce the sodium, calories and fat and add some more vegetables into the mix (more peppers, onions, tomatoes, whatever you'd like).

Directions

Spray with pan non-stick spray. Layer all ingredients in a deep dish (I use a circle 8" or 9" non stick cake pan). I just did sweet potato fries, chorizo, a little cheese, the bell peppers and topped with the eggs and used my fork to create holes for the egg to fall down into. Tape and shake against counter to settle it, cover with foil and pop in a 375 oven for about 25 minutes, remove foil and bake for an additional 35 minutes or until it sets and is lightly browned on top. It's a little high in sodium but for a once in a while dish, it's delicious.
