    Spray Oil
    1 onion, chopped
    1 carrot, finely chopped
    1 celery stick, finely chopped
    a few thyme sprigs
    2 bay leaves
    2 cloves of garlic
    150g diced chorizo
    1/4 tsp ground cinnamon
    1 tsp smoked paprika
    2 cans of chickpeas, rinsed and drained
    1 - 2 tbsp sherry vinegar
    400g Spinach


Spray a large pan with oil and gently fry the onion for 4 minutes. Stir in the carrot, celery, thyme and bay. Season then cook for 2-3 minutes.

Add the garlic, chorizo, cinnamon and paprika. Gently fry for 10 minutes until the chorizo starts to release its oils and crisp up.

Stir in the chickpeas, vinegar and 150ml water. Simmer for 1 - 2 minutes.

Add the spinach, stirring until it wilts a little. remove from the heat and season to taste.
