    4 boneless, skinless chicken breasts
    2 slices of wholemeal bread, made into crumbs in food processor
    2 tsp dried herbs
    400g can of chopped tomatoes
    1 garlic clove, crushed
    1 tsp balsamic vinegar
    2 tsp tomato puree (paste)


Turn the oven on to 190 C

Split the chicken breasts and open out.

Put in an ovenproof dish.

Mix the tomatoes with the garlic, vinegar and tomato puree and spread over the chicken.

Mix the breadcrumbs with the herbs and sprinkle over the chicken.

Bake for 20 - 25 minutes until tender.
