    500g New Potatoes
    1 can sweetcorn
    1/2 red onion, finely sliced
    juice 1 lime
    2 tbsp oil
    2 garlic cloves, crushed
    1 tsp smoked paprika
    4 boneless skinless chicken breasts, each halved lengthways to make to thin escalopes
    small bunch of fresh coriander (cilantro), leaves roughly chopped.


boil the potatoes for 12 minutes. Drain well. Heat the corn in the microwave or in a pan.

Meanwhile, mix the red onion with the lime juice and half the oil in a large salad bowl.

Mix the other half of the oil with the garlic, paprika and some seasoning in a shallow bowl and toss the chicken in it until fully coated.

Heat a griddle or frying pan, then griddle or fry the chicken for 3 minutes on each side, until cooked through.

Tip the potatoes into the bowl with the onions, and corn. Mix the chopped coriander leaves into the salad, along with some seasoning.

Serve with line wedges if preferred.
