    Lemons, 1 fruit without seeds (remove)
    Garlic, 1 clove (remove)
    Rosemary, dried, 1 tbsp (remove)
    Cilantro, dried, 1 tbsp (remove)
    Tofu, extra firm, 0.2 block (remove)
    Mushrooms, fresh, 3 medium (remove)
    Salt, 1 tsp (remove)
    Green Peppers (bell peppers), 1 cup, strips (remove)
    Peppers, sweet, red, raw, sliced, 1 cup (remove)


Take the lemon and cut in half. Squeeze the juice into a small to medium bowl. Crush the garlic and add it to the lemon juice. Then add the rosemary, cilantro, and salt and pepper to taste. Whisk it together. Wash the mushrooms and peppers. Cut into chuncks. Cut the tofu into chunks. Put the tofu and veggies onto thte skewer alternating between the tofu, mushrooms and peppers. Once done drizzle the lemon juice mixture over and let sit for 5 minutes. While it is resting turn on the grill. Put a piece of foil on the grill to prevent sticking. Cook the skewer on the grill until cooked as you desire. Let cool for 2 minutes then serve! This recipe makes enough for one person.
