    8 large eggs, whisked
    1/2 cup skim milk
    3/4 cutp 2% shredded cheddar cheese
    2 tbsp olive oil
    1 onion, chopped
    1 red pepper, chopped or diced
    1 green pepper, chopped or diced
    1 bag baby spinach, prewashed, chopped


Saute chopped onions, chopped peppers and chopped fresh spinach in olive oil. Let cool 10 minutes. Mix together eggs, cheese and milk. Add onion/pepper mixture and cook for about 5 minutes to melt cheese. Oil muffin cups or oil rectangular glass pan and fill with mixture. Bake 350 degrees for 17-20 minutes
